Peppermint Bark Cookies

Make Peppermint bark that can be exchanged at your next christmas cookie exchange

Prep Time 20 minutes
Servings 24 cookies


  • 1 box Nathan’s Famous Chocolate Wafers
  • 5 peppermint candy canes
  • 5 drops of peppermint essential oil
  • 4 ounces of white chocolate candy coating


  1. Prepare a 2 cookie sheets with cookie cooling racks on them.
  2. Place the candy canes in a ziploc bag and crush with a meat tenderizer mallet (or shoe)
  3. Melt the candy coating in a small bowl 300 seconds at a time, stir after each time until smooth.
  4. Add the peppermint essential oil to the candy coating
  5. With a spoon scoop a small scoop of candy coating onto a chocolate wafer and spread in a circular motion.
  6. Immediately after spreading the candy coating, sprinkle peppermint candy on top. (It helps to have a cookie buddy for this step)
  7. Place on the cookie sheet/rake and let cool.
