Prepare a 2 cookie sheets with cookie cooling racks on them.

Place the candy canes in a ziploc bag and crush with a meat tenderizer mallet (or shoe)

Melt the candy coating in a small bowl 300 seconds at a time, stir after each time until smooth.

Add the peppermint essential oil to the candy coating

With a spoon scoop a small scoop of candy coating onto a chocolate wafer and spread in a circular motion.

Immediately after spreading the candy coating, sprinkle peppermint candy on top. (It helps to have a cookie buddy for this step)

Place on the cookie sheet/rake and let cool.
