Chocolate Chocolate Chip Bundt Cake RecipeThis chocolate chip bundt cake was made because a terrible injustice has occurred in my family.  My son’s birthday for multiple years in a row occurred during our annual extended family Lake Powell Trip.  We’d have grandma and grandpa and cousins and aunts and uncles all around to help him blow out candles and wish him well on his birthday.

My daughter’s birthday has never occurred on vacation

This is an injustice I did not try to create.  It was not a problem I wanted to make.  But circumstance created it.  I can say little to defend myself.  But finally I said, “Let’s visit family for your birthday and celebrate it then.”  She agreed.  And rightly so since this was a big deal to travel to family during the school year when there was pretty much no vacation days scheduled.

I now had to make the birthday a celebration to make up for years of neglect but I hate it when things get over the top.  First order of business make sure all the family shows up and is there to celebrate.  I put Grandma on that job because when she extends an invitation you better accept (got love Grandma Sway).  Next order of business the location.  Nearby park was choosen as this is AZ and we can’t do that at home in the cold weather.  Gift ideas.  Seriously, it is so hard to buy for kid over the age of 10.  FaVe Mom has some nice ideas and I checked those out.  In the end, I settled for the exact items she told me she wanted.  (this included just ordering them from her amazon picks).

I got to plan food

When you ask your daughter what she wants for her birthday meal and what would mean a great deal to her, you expect a rather over the top request or an expensive restaurant location.  This was our conversation

Mom: What would you like for your birthday dinner?  The cousins will be coming after for dessert.
DD:  Oh, I know.  I want grilled cheese and tomato soup.
Mom: For your birthday dinner?
DD:  Yeah.
Dad:  Awesome!  Best birthday dinner ever!

Make the Chocolate Chocolate Chip Bundt Cake for a party or just to enjoy.So that’s what I made.  We drove 14 hours to visit family and eat grilled cheese and tomato soup.  Seriously, I have kids that love the best stuff.  Cause low work for me.  Dessert of course was another matter.  To my family chocolate and peanut butter is one word, “chocoaltenpeanutbutter” so naturally that was the chosen dessert.  Chocolate chocolate chip cake with peanut butter frosting.  This recipe came from long ago when my mother made it.  I think it gets called a sourcream cake now.  But whatever you call it, you’ll have trouble saying it since you’ll be shoveling it in your mouth as fast as possible.

And it made up for the lack

In all, my daughter felt that we had given her birthday attention worthy of her teen desires.  And I feel a little less guilt over the whole thing.

Chocolate Chocolate-Chip Bundt Cake

Super easy and so moist and delicious. And of course chocolate-y

Ingredients

  • 1 package Devil’s Food Cake Mix darkest chocolate you can get
  • 1 box instant chocolate pudding mix
  • 1 cup sour cream
  • 1 cup vegetable oil
  • ½ cup water
  • 4 eggs
  • 2 cups semi sweet chocolate chips

Instructions

Preheat the oven to 350 degrees.

Grease your bundt pan well (don’t want it sticking cause you must turn it out of the pan at the end)

Mix all the ingredients together in a stand mix, beat until incorporated fully and batter is smooth.

Pour into greased bundt pan.

Bake for 50-55 minutes or until a toothpick comes out clean.

Allow to cool for 10-15 minutes on a wire rack

Turn over to drop cake from pan. Let cool the remainder of the way.

Frost with frosting of choice. (we pick peanut butter frosting every time)

*I grease my bundt pan the old fashioned way with shortening and then sprinkle flour or it always sticks.
