Pumpkin Bread and Pumpkin Spice Lattes

Starbucks sure did a number on all of us when it began that pumpkin pie spice frenzy a few years ago.  (I am hopeful their maple pecan starts a similar craze).  I suppose the best part of that craze is that I realized I like pumpkin in a lot more things than just pumpkin pie.  Now I haven’t embraced the whole roasted pumpkin on my salad thing, but I could get there someday.  For now I am enjoying a fall favorite in Chocolate Chip Pumpkin Bread.  I can’t say when I first discovered this bread, my local Great Harvest has been making it for years).  But what I can tell you is how I used this bread to silence carpool.

My kids attended a local charter school (this is a public school, just not the neighborhood district school).  With charter schools there are no busing services, so I dropped off and picked up kids every day.  The moms I found to carpool with were wonderful and usually took the afternoon shift.  This one afternoon I was needed to fill in.

I had discovered in my years of carpooling that if I fed the kids a snack in the car then they were more likely to quickly move to the next afternoon activity.  I was of course coming straight from another appointment to pick up the kids, so there were no snacks in my car (unless you count those pistachios that rolled under the seats).  Stopping quickly in at the Great Harvest, I figured I could grab something for them.  That something was pumpkin chocolate chip bread.  

Once in the car and stopped in the carpool line I realized I had a loaf of bread and no knife to slice it.  There were 5 kids about to enter my car.  Wait they were already in the car and they spotted the bread.  Next thing I know the bread is being passed around like some tribal plate of  delicacies.  Each kid ripped off a hunk of bread and passed it on.  No one complained about getting the end of the bread (always an issue with slices).  In fact no one talked for the ride home, except to say, “bread please.”

Chocolate Chip Pumpkin Bread

Total Time 1 hour 5 minutes
Servings 10 slices

Ingredients

  • 1 15 oz can pumpkin NOT pumpkin pie mix
  • 1 cup butter
  • 2 cups sugar
  • 3 cups flour
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice

Instructions

  1. Preheat oven to 375 degrees.
  2. Spray 2 large loaf pans or 3 medium with baking spray.
  3. Cream butter and sugar.
  4. Add vanilla and eggs.
  5. Blend until creamy.
  6. Add pumpkin combine well.
  7. Add dry ingredients. Mix thoroughly.
  8. Mix in chocolate chips and by hand.
  9. Pour batter into prepared pans.
  10. Bake 60 minutes.
  11. Check for doneness, if knife comes out clean remove and let rest 20 minutes.
  12. Remove from pan and let cool completely.

*1 cup chopped nuts can be added with chocolate chips
