Berries with Mint Salad

This is plain and simple berries at their best. A touch of fresh mint simply makes the sweet berries better. Berry fruit salads are nothing new, but what we know about how healthy berries are for us, is new.

Why eat fresh berries and lots of them? Berries have powerful antioxidants which help your body fight free radical damage caused to from stress. (If you have no stress you can disregard this useful information.)   These free radicals are what can lead to illness pain and inflammation. Eating a diet with antioxidant rich berries can improve your overall well being not to mention improve health, protect your skin and hair from aging, and prevent certain diseases.   And if you don’t believe me as the people at Eating Well will give you a huge list of all the clinicals to prove how great berries are for you.  But who needs clinical proof.

So enough with the health benefits.  This salad is so simple I can’t even tell you how quick it is.  Fresh mint may be something you don’t often have on hand.  That is why I just buy a plant of it and keep it alive on the window sill. (Trust me you can do this, I have a black thumb and mine survive several months).  Some of you might argue that this isn’t a full salad.  and that’s fine if you feel this way, but I serve it on the side and call it a salad.  You can deal with it.

 

Mixed Berry Fruit Salad

Quickest and freshest way to serve berries you will enjoy and are an almost dessert side dish with a hint of mint.

Course Salad
Prep Time 5 minutes
Servings 4 side dishes

Ingredients

  • 6 oz fresh raspberries
  • 6 oz fresh blackberries
  • 6 oz fresh blueberries
  • 6-8 mint leaves

Instructions

  1. 1. Wash the berries and dry, gently

    2. Cut the fresh mind leaves from the stem and chop coarsley

    3. Sprinkle mint over the berries

    4. Gently, toss to combine

    5. Serve immediately (if you don't "accidently" eat it all first)

Recipe Notes

You can sprinkle this over yogurt or pound cake or angle food cake for a dessert, but that isn't necessary.

 

Make berries tast even more fresh with some mint and make this salad in less than 10 minutes.
